Aged Sherry Vinaigrette

Sherry Vinegar is Spanish sherry that is fermented with yeast and naturally occurring sugar to make alcohol, and then fermented again with naturally occurring acids to make vinegar. Some vinegar is barrel aged for 20-30 years. It has a high acid content so use it sparingly and to taste in vinaigrettes.

2 cups olive oil, extra virgin
1 cup aged sherry vinegar
¾ cup minced fresh shallots
2 Tbsp chives
½ tsp fresh ground pepper
1 tsp salt
2 Tbsp sugar

Whisk ingredients together in a bowl.

Vinegar has been used for over 10,00 years. It is wine that has gone past its time and is beginning to sour. It has been used as a preservative, mixed with herbs and spiced for use with food, and as an aid in cleaning as well as healing.

Use vinegar mixed with herbs and spices or fruit to give salad dressings an extra lift of flavor.
