Barley Casserole
Ingredients
1 cup barley
½ cup oil
½ cup pinenuts
1 cup chopped onions
1 cup chopped parsley
½ cup chopped green onions
6 cups vegetable stock (can sub Chicken stock for non vegetarian dish)
1 cup sliced mushrooms
salt and pepper to taste
Procedure
Heat oven to 350.
Heat stock.
Sauté barley, onions, pine nuts and mushrooms in oil until mushrooms are transparent.
Add hot stock, mix well and turn into an oiled casserole dish.
Bake covered for 1 hour or until tender. Uncover for last 10-
15 minutes.
Stir in parsley and green onions and serve with crusty bread.
Serves 6.
