Boquerones
2 cups Spanish white anchovies-Boquerones
¼ cup olive oil
2 each garlic cloves, thinly sliced
1 lemon
10 whole cloves
1/8 tsp red chili pepper flakes

½ cup finely diced celery
¼ cup finely chopped parsley
1. Wipe anchovies with paper towel to remove oil they came in, and put in a flat pan.
2. Grate with large grater – 1 lemon
3. Chop zest.
4. Juice the lemon.
4. Mix the garlic, chopped lemon zest and juice with the olive oil.
5. Add a few red pepper flakes and drizzle olive oil mixture over anchovies.
6. Marinate for 2 days
To serve
Wipe oil off the anchovies and put on a plate.
Sprinkle the celery and parsley over the anchovies and serve.
