Grilled Pineapple-Tomatillo Salsa

Tomatillos are in the tomato and nightshade family and have been a culinary staple since the Aztec times.

They are about 1-2” in diameter and should have a papery outer skin (remove before cooking) and should be bright green.

Tomatillos, also called tomates verdes, have a wonderful tart taste and can be boiled for 15 minutes and processed or grilled and processed.

Ingredients
2 lbs. tomatillos (whole, large and fresh)
1 pineapple, peeled, halved, cored and sliced into 1” thick slices.
4 Tbsp canned chipotle with sauce
¼ cup cilantro finely chopped
3 Tbsp honey
1 cup onion diced small
2 beefsteak tomatoes, diced

Procedure
1. Roast tomatillos on outdoor grill or grill plate.
2. Grill pineapple on outdoor grill or grill plate.
3. Mix tomatillos, chipotle, cilantro and honey in blender or processor.
4. Dice pineapple into 1/8” pieces.
5. Add pineapple to tomatillo mixture along with diced onion and tomatoes.
6. Season and chill.
7. Serve with meats or seafood.
