Sweet Potato Polenta

Ingredients
3½ # yams
2 oz butter
½ tsp ground white pepper
3 tsp salt
2½ cups heavy cream
2½ cups water
1 cup polenta
3 Tbsp brown sugar
½ cup grated Parmesan cheese

Procedure
1. Roast whole un-peeled yams in 350 degree oven until soft, approx 30 min.
2. In a heavy saucepan, bring the heavy cream and water to a boil.
3. Reduce heat to medium.
4. Slowly add the polenta, stirring constantly.
5. Cook over low heat for 15-45 min, stirring constantly.
6. Season with 1/2 the salt and all the pepper – you may need to season more as the polenta cooks, so taste often!

Watch point – polenta will absorb liquid and become soft and creamy. The time this takes varies. Patience and constant stirring will pay off. Polenta should pull away from the sides of the pan when done. You may need to add more liquid – either milk or water.

7. Puree baked yams in food processor.
8. Add pureed yam, brown sugar and cheese in the pan and mix well.
9. Taste for seasoning and adjust as necessary.
10. Pour into casserole.
11. Finish with a dab of butter and keep warm in low oven. This polenta can be reheated.
